Search the internet for the words “pumpkin spice” and you’ll find recipes that run the gamut from spice muffins to ice cream and everything in between. People LOVE pumpkin flavored anything this time of the year.
Starbucks claims their spice latte is their most sold seasonal drink, with over 200 million cups sold!
If you’re one of those latte lovers, we’ll show you how to make your own. But we’ll take it one step further. Making 1 or 2 lattes at a time can be time consuming, so below are instructions for making a large batch of the ‘pumpkin base’.
This is how your favorite coffee shops are able to whip up latte after latte in just minutes. This base can be refrigerated and makes up to 14 lattes.
NOW you can really have a pumpkin spice latte in mere minutes!
How to Make the Best Pumpkin Spice Latte (serves 2)
- Add pumpkin puree (not filling) and spices to a small saucepan over medium low heat. Allow the spices and pumpkin to become aromatic
- Add sugar
- Add the milk and lots of vanilla and warm through
Next comes the caffeinated part with 2 options:
- Add 2 shots of espresso (found in Target or Amazon) – or –
- 1/4 cup of strongly brewed coffee
How to Make Pumpkin Base (this can make up to 14 lattes). You will need:
- 1 can pumpkin puree
- 1 C sugar (yep, it’s a lot)
- 4 Tablespoons Pumpkin Pie Spice (Or 3 Tbs. cinnamon, 2 tsp. ginger, 2 tsp. nutmeg, 1 ½ tsp. allspice, 1 ½ tsp. cloves)
- Up to 1 bottle vanilla extract depending on taste (the more vanilla used will simulate the artificial flavor found at cafes)
When ready to make a latte:
- Put 4-6 oz milk in a small saucepan
- Add 2-4 oz. strong coffee and 2 Tablespoons of the cooked pumpkin with spices
- Heat through until hot
- Pour into a mug and top with whipped cream
How to Make a Cold Pumpkin Latte:
- Add 2 Tablespoons of the cooked pumpkin with spices to a blender
- Add 4-6 oz of Milk and a few ice cubes (for thickness)
- Add 2-4 oz coffee or 2 shots of espresso
- Blend until smooth
- Pour over ice and top with whipped cream
Play around with the base flavoring to your liking. This may require adding agave or corn syrup to mimic the cafe’s use of pumpkin syrup.

- 2 Tablespoon pumpkin puree, not pumpkin pie filling
- 2 Tablespoons sugar, can use more or less depending on how sweet you want it
- 1 1/2 Cups milk
- 1 Tablespoon Vanilla extract
- 1–2 teaspoons pumpkin pie spice
- 1/2 Cup strongly brewed coffee or 2 espresso shots
- Whipped cream for serving
- In a medium saucepan, add the pumpkin puree and spices. Cook over low/medium heat stirring until the spices become fragrant. Add the sugar. Cook and stir a minute more until bubbly.
- Slowly add the milk and heat until hot. Add the vanilla and espresso (or coffee).
- Heat until hot, but not boiling.
- Divide into serving mugs and top with whipped cream and pumpkin pie spice, if desired.
To make up to 14 lattes:
1 Can pumpkin puree
1 Cup sugar
4 Tablespoons Pumpkin Pie Spice (Or 3 Tbs. cinnamon, 2 tsp. ginger, 2 tsp. nutmeg, 1 ½ tsp. allspice, 1 ½ tsp. cloves)
Up to 1 bottle vanilla extract depending on taste
Put the entire can of pumpkin in a small saucepan and heat through. Stir often to prevent burning. Add the spices. Add the sugar and vanilla. Store in airtight container in the refrigerator until ready to use.
To make a latte, add 2 Tbsp of the cooked pumpkin to 4-6 oz of milk and 2-4 oz of coffee. For a warm latte, heat through. For a cold latte, add the mixture to a blender with some ice.
