- 6 large hard boiled eggs, cooled and peeled
- 1 medium ripe avocado, cut in half and pulp removed
- 1 Tablespoon mayonnaise
- juice of 1/2 lime (approx. 1 Tablespoon)
- 1 clove of garlic, minced
- 1 Tablespoon cilantro, finely chopped
- 1/4 tsp onion powder
- salt and pepper to taste
Instructions
- Peel eggs and cut them in half lengthwise. Remove the egg yolkes and place them in a small bowl.
- Add the avocado, mayo, lime juice, garlic and cilantro.
- Add the tsp onion powder and about 1/8 tsp freshly ground black pepper and mix it all together. Season with salt and pepper to taste.
- Pipe the avocado mixture into the eggs with a pastry bag using a star tip or a ziploc bag and chill until ready to serve.
