SIMPLE Banana Foster Dutch Baby

Ingredients

For the Dutch Baby:

  • 1/2 Cup Milk
  • 1 tsp Vanilla extract
  • 2 Large Eggs
  • 1/2 Cup Flour
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 2 tsp Butter

For the Bananas Foster:

  • 4 Tbsp. Butter
  • 1/2 Cup Brown Sugar
  • 3 Tbsp Rum
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  • 3 Bananas, peeled and sliced lengthwise and crosswise
  • 1/4 Cup Pecans, chopped (optional)

Instructions

Make the Dutch Baby:

  1. Preheat an oven to 425°F. Place a 10” cast iron skillet into the oven and allow it to get very warm while preparing the batter.
  2. In a small bowl, whisk together the eggs, milk, and vanilla extract until combined.
  3. Add the salt and flour slowly, whisking continually. This will ensure you don’t get any lumps in the batter.
  4. Remove the skillet from the oven and add the butter. Swirl it around to coat the bottom of the skillet.
  5. Once the butter has melted, pour the batter into the skillet and place the skillet back into the oven. Similar to a soufflé, don’t open the oven door while baking or your Dutch baby may not rise properly!
  6. Bake for 15 minutes, or until the sides are puffed and golden brown. Remove from the oven and add toppings of choice.

How to make the Bananas Foster:

  1. Place a large skillet over medium-high heat. Add the butter, brown sugar, and rum and stir until the butter has fully melted.
  2. Once the butter is melted and the mixture is starting to bubble, turn the heat to low and whisk in the vanilla, cinnamon, and pecans and cook for another minute—whisking continually so it doesn’t burn.
  3. Add in the sliced bananas and stir to make sure the banana slices are fully coated.
  4. Pour the bananas and caramel into the dutch baby. Topped with whipped cream and additional nuts if desired.
  5. Serve immediately.

Notes

This bananas foster recipe does not have to be lit on fire. The alcohol will have time to evaporate during the bubbling period.

Light or dark brown sugar will work in this recipe.

Captain Morgan Spiced Rum was used in this recipe to enhance the caramel and cinnamon flavors, but any dark rum will work.

Look for bananas that are a bright yellow
