Ingredients

Scale
  • 1 ⅓ Cups All-purpose flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • ½ Cup Hot Cocoa Mix
  • ½ Cup (1 stick) unsalted butter, softened
  • ½ Cup Brown sugar, packed
  • 1 Egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ Cup Chocolate chips, milk or semi-sweet
  • ½ Cup marshmallow bits 

Instructions

  1. Preheat an oven to 350° F and line 2 baking sheets with parchment paper or silicone mat.
  2. In a medium bowl, whisk together the flour, baking powder, salt and hot cocoa mix.
  3. In a large bowl, cream together the butter and brown sugar until well combined and fluffy.  
  4. Add the egg and vanilla extract and beat until well combined.  
  5. Gradually add dry mixture and beat until well combined.
  6. Stir in chocolate chips and mallow bits.
  7. Scoop dough using a cookie dough scoop or tablespoon and place on prepared baking sheet.
  8. Bake for 8-10 minutes.  Place on a wire baking rack to cool and continue until the batter is gone.
