Oh Honey bee mine! Talk about a cupcake show stopper !
These honey bee cupcakes are super moist with the help from 4 oz. of softened cream cheese that is mixed into the batter. A little cinnamon is added for an unexpected twist which balances beautifully with the cream cheese.
They are then crowned with beehive-like swirls of yellow buttercream frosting that is made with honey and cream cheese. But the final touch are the sweet honey bee sugar toppers.

- 1 ½ Cups All-purpose flour
- ¾ Cup Sugar
- 1 teaspoon Baking powder
- ½ teaspoon Salt
- ½ Cup Butter, softened
- 4 ounces Cream Cheese, softened
- 2 Large Eggs
- ¼ Cup Buttermilk
- 1 teaspoon Vanilla extract
- 1 teaspoon Cinnamon
Frosting Ingredients
- 1 Stick Butter, softened
- 6 ounces Cream cheese, softened
- 1 teaspoon Vanilla extract
- 1 Tablespoon Honey
- 4 cups Powdered sugar
- 1 Tablespoon Half and Half (or whole milk)
- Yellow food coloring
- Wilton sugar “bees” icing decoration
- 1 large piping bag, 1 large round frosting tip
Instructions
- Preheat oven to 350°F. Spray or line a standard muffin tin.
- Using a hand or stand mixer, cream the butter and sugar together until light and fluffy. For further instructions on how to cream butter and sugar go here.
- Mix in the cream cheese, vanilla, buttermilk, and eggs on low until well incorporated. Mix in the honey and mix on medium for 1 minute.
- Fold the wet ingredients into the dry ingredients. Add batter into the muffin tin until each is about ⅔ full.
- Bake for 17-20 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.
Directions for Frosting:
- In a large mixing bowl or stand mixer, cream together butter and cream cheese and beat until light and fluffy. Add in the vanilla extract.
- Slowly mix in the powdered sugar, 1 cup at a time, while adding a bit of milk in between each cup. Continue to mix for 1 minute or until creamy. Mix in the cinnamon until well incorporated.
- Add in the food coloring.
- Prepare piping bag and fill bag with frosting. Pipe a small “blob tower” of icing in the middle of the cupcake.
- The frost your “beehive” around the “blob”. Decorate with your cute bumblebees and enjoy!
