These simple to make cherry bars will not only be a HUGE hit, they will become a regular in your dessert rotation.
The cookie base uses your basic pantry items like butter, sugar, eggs and flour and is ready in mere minutes.
- Cream the butter and sugar together.
- Add eggs, one at a time.
- Stir in vanilla.
- Add flour and salt.
- Add to creamed mixture and combine.
Making the bars is just a matter of layering the dough and fruit onto a baking sheet that’s been sprayed with Pam or parchment paper.
- Spread the dough into a baking pan
- Spread pie filling over batter evenly
- Drop remaining batter by teaspoon over the top
- Bake and cool on rack
- Drizzle glaze over cooled bars.
Once the bars are cooled you can glaze them with powdered sugar and cut them into squares.
SIMPLE Cherry Bars

COOKIES BASE:
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups white granulated sugar
- 4 eggs, room temperature
- 1 teaspoon vanilla (or almond) extract
- 3 cups all-purpose flour
- 1 teaspoon salt
- 2 cans (21 oz) cherry pie filling
GLAZE:
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- ¼ teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees
- Spray 15x10x1 baking pan with non-stick cooking spray
- In a large bowl, cream butter and sugar
- Add eggs, one at a time, beating well after each addition
- Stir in vanilla
- In a small bowl, combine flour and salt
- Add to creamed mixture
- Evenly spread about 3 cups of dough into baking pan
- Spread pie filling over batter evenly
- Drop remaining batter by teaspoon over the top
- Bake for 30 – 35 minutes or until a toothpick inserted in the center comes out clean
- Cool on rack
- Combine the ingredients for the glaze and drizzle over cooled bars.
- Cut and serve.
- Store leftovers in airtight container.
NOTE:if you add the vanilla the glaze is a bit darker, if you want the glaze to be bright white, use clear vanilla extract
