These simple to make cherry bars will not only be a HUGE hit, they will become a regular in your dessert rotation.

The cookie base uses your basic pantry items like butter, sugar, eggs and flour and is ready in mere minutes.

  1. Cream the butter and sugar together.
  2. Add eggs, one at a time.
  3. Stir in vanilla.
  4. Add flour and salt.
  5. Add to creamed mixture and combine.

Making the bars is just a matter of layering the dough and fruit onto a baking sheet that’s been sprayed with Pam or parchment paper.

  1. Spread the dough into a baking pan
  2. Spread pie filling over batter evenly
  3. Drop remaining batter by teaspoon over the top
  4. Bake and cool on rack
  5. Drizzle glaze over cooled bars.

COOKIES BASE:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups white granulated sugar
  • 4 eggs, room temperature
  • 1 teaspoon vanilla (or almond) extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 cans (21 oz) cherry pie filling

GLAZE:

  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees
  2. Spray 15x10x1 baking pan with non-stick cooking spray
  3. In a large bowl, cream butter and sugar
  4. Add eggs, one at a time, beating well after each addition
  5. Stir in vanilla
  6. In a small bowl, combine flour and salt
  7. Add to creamed mixture
  8. Evenly spread about 3 cups of dough into baking pan
  9. Spread pie filling over batter evenly
  10. Drop remaining batter by teaspoon over the top
  11. Bake for 30 – 35 minutes or until a toothpick inserted in the center comes out clean
  12. Cool on rack
  13. Combine the ingredients for the glaze and drizzle over cooled bars.
  14. Cut and serve.
  15. Store leftovers in airtight container.

NOTE:if you add the vanilla the glaze is a bit darker, if you want the glaze to be bright white, use clear vanilla extract

    I made these right before the shut down for my lady friends for our weekly card game. Would you believe I finished the pan myself in just under a week? So. Fantastic with coffee in the late morning watching the price is right.
