SIMPLE Apple Cinnamon Baked French Toast

Ingredients

  • 1 stick Butter, unsalted
  • 1/2 Cup Brown sugar, packed
  • 1 tsp Vanilla extract
  • 2 tsp Ground cinnamon
  • 1/4 tsp Salt
  • 4 Apples, peeled, cored, and diced small
  • 2 Large Eggs
  • 1 1/2 Cups Heavy cream
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 6 slices Brioche (or other thick bread, such as Texas Toast), sliced in half

Instructions

For the apple mixture:

  1. Melt the butter in a large pan over medium heat.
  2. Add the brown sugar, vanilla, cinnamon, and salt. Whisk until combined.
  3. Stir in the diced apples to coat.
  4. Increase the heat and bring the mixture to a boil, then reduce the heat again and allow to simmer for 10 minutes or until the sauce is thickened and the apples are soft. Remove from heat.
  5. Preheat the oven to 375° F and prepare an 8 or 9-inch baking dish with cooking spray, butter, or coconut oil. Set aside.
  6. In a large bowl, whisk together the eggs, cream, vanilla, and cinnamon.
  7. Coat each half slice of bread with the egg mixture until well-saturated, then arrange in the prepared baking dish, slightly overlapping.
  8. Spoon the apple mixture over the bread, spreading evenly.
  9. Bake for 25-30 minutes, or until the top is golden brown.
  10. Slice and serve with maple syrup, powdered sugar, or whipped cream and enjoy!
